Botanički profil
Unatoč imenu, ružičasti papar uopće nije pravi papar. Dolazi od Schinus terebinthifolia, brazilskog papra, cvjetajuće biljke porijeklom iz Južne Amerike, koja nema nikakve veze s Piper nigrum, biljkom koja nam daje crni, bijeli i zeleni papar. Bobice se beru cijele i suše, što čuva njihov prepoznatljiv izgled i hlapive ulja u vanjskoj kožici. Ta ulja daju ružičastom papru njegov karakter: blagu, voćnu toplinu s laganim smolastim prizvukom, primjetno slađu i manje oštru od crnog papra, bez ljutine čilija.
U kuhinji i izvan nje
Ružičasti papar cijenjen je u francuskoj i brazilskoj kuhinji, gdje se koristi u kremastim umacima, ribljim jelima i začinskim mješavinama koje traže boju jednako kao i okus. Prirodno se slaže s citrusima, mekanim sirevima, čokoladom i bijelim mesom. Budući da je vanjska kožica osjetljiva, najbolje ih je dodati cijele na kraju kuhanja ili ih lagano zdrobiti neposredno prije upotrebe, jer dugotrajna toplina umanjuje i boju i suptilne aromatične note. Također dobro djeluju ako se namakaju u toploj kremi ili ulju kako bi se izvukao njihov miris prije nego što se tekućina upotrijebi u umaku ili preljevima.
