Cypress — the ancient Mediterranean evergreen with a sharp, green, woody scent that deepens beautifully over time. Autumn's grounding companion.
Cypress (Cupressus sempervirens) is an evergreen conifer with a very long European memory. The Romans planted it along roads and around temples. The Greeks associated it with death and the underworld — a tree that watched over the passage from one state to another. It has been woven into funeral wreaths and garden hedges for two thousand years without interruption.
The scent is distinctive. Sharp, clean, almost medicinal at first — think pencil shavings and pine resin — before it settles into something drier, warmer, more resinous. It opens green and slightly bitter; the dry-down is woody, a little smoky, faintly sweet. On a cold morning it reads almost sharp; in a warm room it softens and deepens. It is a scent that changes with temperature and with time, which makes it a particularly interesting one to live with.
In the seasonal register, cypress belongs to autumn and early winter — the moment when the garden is being put to bed and the light is changing gear.
