Fennel

Foeniculum vulgare is a hardy perennial that has been growing wild across the Mediterranean for at least three thousand years. The Romans called it foenum — hay — and carried its stalks as both snack and medicine. Pliny the Elder listed it in his natural histories alongside remedies for everything from upset stomachs to failing eyesight. By the time it crossed the Alps into northern cooking, it had already spent centuries in the herb garden and the pharmacy shelf.

The scent opens bright and anise-precise — clean, herbal, a little sweet — then settles into something greener and more complex. There is a faint bitterness underneath, the taste of the seed rather than the bulb, and it lingers in a room for longer than you might expect from something so clean. It is not a quiet scent, but it asks for space rather than filling it.

Autumn is its natural season. When the garden thins and the year begins its slow turn inward, fennel's clarity finds its register.
