Foeniculum vulgare is a hardy perennial that has been growing wild across the Mediterranean for at least three thousand years. The Romans called it foenum — hay — and carried its stalks as both snack and medicine. Pliny the Elder listed it in his natural histories alongside remedies for everything from upset stomachs to failing eyesight. By the time it crossed the Alps into northern cooking, it had already spent centuries in the herb garden and the pharmacy shelf.
