- De menthol komt krachtig en zuiver naar voren, scherper dan groene munt, zonder de zoetheid, en dichter bij het wilde karakter van de plant.
- De thee krijgt een bleek groen-gouden kleur en verfrist het gehemelte volledig: het soort thee dat je zintuigen reset na een uitgebreide maaltijd.
- Met een kilogram vul je een grote voorraadpot en heb je maandenlang genoeg voor dagelijks gebruik, of langer als je de munt met andere kruiden mengt.
Zo laat je de thee trekken
Giet vers gekookt water over een klein handje blad, ongeveer een eetlepel per kop, en laat het afgedekt vijf tot zeven minuten trekken, zodat de vluchtige oliën in het water blijven in plaats van als stoom te ontsnappen. Hoe langer de thee trekt, hoe sterker de mentholsmaak. Zeef de thee en drink hem puur, of zoet hem licht met honing als de scherpte op zichzelf te sterk is. Het blad leent zich goed voor mengsels: voeg citroenmelisse of kamille toe om de smaak zachter te maken, of venkelzaad als je naast de munt wat warme anijstonen wilt.
In de keuken en in je kop
Pepermunt wordt al eeuwenlang gekweekt. Het is een kruising van watermunt en groene munt die krachtiger bleek dan beide ouderplanten. In grote delen van Europa en Noord-Afrika werd het de favoriete kruidenthee, na het eten gezet om een volle maag tot rust te brengen of vroeg in de ochtend voor helderheid. Behalve in de theepot wordt het gedroogde blad gebruikt in Noord-Afrikaanse muntthee (traditioneel met groene munt, maar pepermunt houdt zich prima staande), in chocoladedesserts waar het de rijkdom van de smaak doorbreekt en af en toe in hartige gerechten uit het oostelijke Middellandse Zeegebied, al vraagt de kracht om een spaarzame hand. Het hoge mentholgehalte zorgt voor een directe, verkoelende smaak die zelfs na maanden in een afgesloten verpakking behouden blijft.
Zo houd je het vers
Bewaar het in een luchtdichte pot of trommel, uit de buurt van direct licht en warmte. De vluchtige oliën vervagen langzaam na verloop van tijd, dus gebruik het binnen een jaar voor de helderste smaak. Het gedroogde blad is broos en geeft meer geur af als je het vlak voor het zetten fijnwrijft.
Een praktisch cadeau
Het past bij iemand die zelf mengsels maakt, graag een goed gevulde voorraadkast heeft of gewoon veel muntthee drinkt en genoeg heeft van kleine doosjes. De royale hoeveelheid en de eenvoud van een zak met één ingrediënt maken het eerder tot een blijvend voorraadproduct voor een huishouden dan tot een vluchtige nieuwigheid.
