El alcaravea, Carum carvi, es una planta bienal de la familia de la zanahoria (Apiaceae), originaria de Europa y Asia occidental. Lo que llamamos semilla es técnicamente un fruto seco, un esquizocarpo en forma de media luna, con estrías a lo largo de su longitud, de color marrón claro con costillas más claras. La planta produce sus semillas en el segundo año, después de pasar el invierno, lo que explica en parte por qué las regiones nórdicas y del norte de Europa son ideales para su cultivo: el descanso por frío forma parte del ciclo. Los veranos cortos y luminosos y las noches frescas de Finlandia concentran los aceites esenciales, especialmente carvona y limoneno, que juntos le dan al alcaravea su sabor característico.
Uso culinario e infusiones
El alcaravea es una de las especias culinarias más antiguas en el norte y centro de Europa. Es el sabor definitorio del pan de centeno tradicional en Escandinavia, Alemania y los países bálticos, donde un pan sin él parecería incompleto. Aparece en el chucrut y otros platos de col fermentada, en el gulash húngaro, en el pastel de semillas austríaco y en el licor kümmel. En la cocina escandinava, se usa para sazonar cerdo, pato y verduras de raíz; en las cocinas del norte de África y Medio Oriente aparece en mezclas de especias y panes planos.
Como infusión herbal, las semillas enteras de alcaravea se remojan en agua caliente para hacer una tisana simple con un carácter limpio y reconfortante. Triturar o machacar ligeramente las semillas antes de infusionarlas libera más aceites volátiles y profundiza el sabor. Las semillas también pueden tostarse en seco en una sartén durante un minuto antes de usarlas en la cocina, lo que suaviza su intensidad y resalta una cualidad más nuez y redondeada.
