Cómo infusionarla
Vierte agua recién hervida sobre un pequeño puñado de hojas, aproximadamente una cucharada por taza, y déjala infusionar entre cinco y siete minutos, tapada, para que los aceites volátiles permanezcan en el líquido en lugar de escaparse con el vapor. Cuanto más tiempo repose, más intenso será el mentol. Cuélala y bébela sola, o endúlzala ligeramente con miel si su intensidad resulta excesiva. Combina muy bien con otras plantas: añade melisa o manzanilla para suavizarla, o semillas de hinojo si quieres aportar un toque cálido de anís junto a la menta.
En la cocina y en la taza
La menta piperita se cultiva desde hace siglos. Es un híbrido de menta acuática y hierbabuena que resultó ser más pungente que cualquiera de sus progenitoras. Se convirtió en la tisana preferida en gran parte de Europa y el norte de África, preparada después de cenar para aliviar la sensación de pesadez o a primera hora de la mañana para despejarse. Más allá de la tetera, las hojas secas se incorporan al té de menta del norte de África (tradicionalmente preparado con hierbabuena, aunque la menta piperita también da buen resultado), a postres de chocolate, donde corta la intensidad, y ocasionalmente a platos salados del Mediterráneo oriental, aunque su potencia aconseja usarla con moderación. Su alto contenido en mentol hace que el sabor sea inmediato y refrescante, y que se conserve incluso tras meses en un recipiente hermético.
Cómo conservarla fresca
Guárdala en un tarro o lata herméticos, protegida de la luz directa y del calor. Los aceites volátiles se desvanecen lentamente con el tiempo, así que úsala durante el primer año para disfrutar de su sabor más intenso. Las hojas secas son frágiles y desprenden más aroma si las trituras justo antes de infusionarlas.
Un regalo práctico
Es ideal para quien prepara sus propias mezclas, mantiene una despensa bien abastecida o simplemente bebe mucha infusión de menta y se cansa de comprar cajas pequeñas.
