A gentle way to brew

For a clear, brisk cup: use 1 tsp per 250 ml at 95°C. Steep 3–5 minutes. Enjoy plain, or with a touch of milk.
For classic stovetop chai: simmer 2 tsp in 200 ml water for 3 minutes. Add 100 ml milk (dairy or plant) and a little sweetness if you like; simmer briefly, then strain.
